The lutefisk feast has been a part of Christmas for me for as long as I can remember. We’d go to my Grandma Herfindahl’s every Christmas Eve for the feast and of course the opening of gifts. Lutefisk is a specialty of Norway, Sweden and Finland. This dish is also eaten in the American states of Minnesota and Wisconsin, where there are large communities of Scandinavian Americans. Lutefisk is consumed mainly during the months of November and December.
